Pork Chops with a Mango Salad

Sweet, salty, sour and finished with a little crunch; this quick dinner came out better than I had expected. It is bright in color and flavor and transported my pallet to the coast of Thailand! Come on this journey with me, it will only take about 30 minutes! Serves 2 people. 

Ingredients: 

  • 1 mango, pealed and sliced thin 
  • 1/2 red onion, diced 
  • 1 red chili, diced 
  • A touch of chili crunch (momofuku)
  • 1/2 c. fresh cilantro 
  • 1/4 c. B'der Jays Microgreens 
  • A hand full of peanuts 

Dressing: 

  • 2 limes, juiced 
  • 1 tbs basil lemongrass olive oil (in store) or olive oil of your choice! 
  • Ground pepper 
  • Salty Acres salt - to taste

Preparation: 

  • Pat Pork chops dry of access moisture. 
  • Rub both sides with Hardcore Carnivore Red seasoning & set aside 
  • In a medium bowl mix together all other ingredients 
  • Whisk together the dressing ingredients and pour over the mango salad 
  • Toss & put in the fridge. 
  • Heat up your cast iron skillet to a medium-high heat. 
  • Add butter & sear pork chops for 5 minutes on each side 
  • Lower heat & cover
  • Cook until 135° internal temp 
  • Remove chops from heat and let rest for 5 minutes 
  • Cut pork chops thin and plate it up over your mango salad 

It's seriously as easy as that! With salads like this I add more of the ingredients I LOVE, so feel free to play & add everything to taste! I put more cilantro in my dishes than anyone I know! haha I hope you enjoy!
