Chorizo Dinner

WOW your guests with this unique dish. Dedicate about 1 hour to this beautiful creation and you'll serve up a 5 star dinner in your own kitchen. 


  • 1 lb Triple C Chorizo
  • Olive Oil
  • 1 small onion
  • Chili pepper
  • Salt
  • Pepper
  • 1 egg yolk
  • 2 Garlic cloves, minced
  • 1 tbs water
  • 4 Red Sweet Potatoes
  • 1 Avocado


Smashed Potatoes:

  • Clean potatoes and Boil until soft
  • Preheat oven to 350°
  • Drain Potatoes
  • Cut in 1/2 and add to a sheet pan
  • Smash each potato with the bottom of a coffee cup
  • You want the skin to tear
  • Sprinkle with olive oil + salt + pepper
  • Bake until golden (about 15 minutes)

Chorizo + Aioli

  • Add a touch of Olive oil to your pan
  • Saute onion until clear (about 2 -3 minutes)
  • Remove casing from Chorizo and add chorizo to onion
  • Add chili pepper + salt + black pepper
  • Cook for about 4-6 minutes until done
  • Drain Chorizo juice into a measuring cup
  • Set chorizo aside
  • Whisk 1 egg yolk + Garlic + water together
  • Slowly drip Chorizo juice into the egg mix and whisk until it thickens

 Plate your meal:

  • Drizzle Potato with a little of the aioli sauce
  • Top with Chorizo
  • Add Aioli to taste
  • Top with 2 slices of Avocado

Eat up, Seriously one of my favorite meals. I will have this in my routine in no time!
