Crispy Pork Cutlets
Crunchy, tart & a little briny; these fried pork cutlets are a whole vibe that anyone can recreate! Y'all know by now that I enjoy simple meals & this one might have taken me 20 minutes to make!
Ingredients:
- 1 lb Triple C Pork Cutlets
- Capers
- Lemon juice
- Lemon Zest - I zested the whole lemon
- Shawarma seasoning or any seasoning you enjoy really!
- A little salt & pepper
- Olive Oil for frying ( about 1.2 inches in your pan)
- 2 eggs
- 1-2 c. flour
- Arugula
- B'der Jays microgreens
- Belle Mille olive oil for finishing
Preparation:
- Mix flour, shawarma, half of the lemon zest, salt & pepper together in a bowl
- Crack eggs into a separate bowl & whisk
- Dry & trim pork cutlets to your liking.
- Pour about 1-1.5" olive oil in your pan of choice & turn burner on medium to high heat! ( a good way to know the oil is ready for frying is to sprinkle some flower in it and if it bubbles up it's ready!)
- Dip cutlets one by one into egg mixture, shaking any excess off.
- Then dip into the flower mixture and again, shake any excess off.
- Drop into the oil & fry for about 4 minutes on each side.
- You can fill your pan with 1 layer of cutlets at a time.
- If you need to add more oil for frying make sure it heats up before adding cutlets.
- Lay a bed of arugula on your plate, layer fried cutlets topped with capers & B'der Jays micro-greens.
- Finish with a little lemon juice & lemon zest & don't forget to drizzle Belle Mille olive oil over it!
