One Pot Chicken and Rice

One pot means very little mess! This also made the best rice I've ever had! Grab your dutch oven, some Triple C Chicken leg quarters and lets get started!
Ingredients:

1 pack of 2 Triple C chicken leg quarters
- Shawarma Seasoning ( or Italian seasoning and smoked paprika)
- 3 garlic cloves, minced
- 1 carrot, peeled and sliced
- half a red pepper, diced
- 1 small onion, diced
- 1 c. Rice
- 2 c. Chicken broth
- Parsley or Thyme
- Olive Oil
Preparation:
- Preheat oven to 400°
- Heat your dutch oven over medium to high heat and add a generous amount of olive oil
- Rub seasoning (I used shawarma!) on both sides of the chicken
- Brown chicken on both sides for about 3-4 minutes
- Remove from your dutch oven and set aside
- Add onion, carrot, garlic, & red pepper to olive oil and saute for about 4 minutes
- Add chicken broth & rice and bring to a boil
- Place chicken on top of rice mix, cover your dutch oven and pop it in the oven for about 30-35 minutes.
- It's done when your rice is tender and your chicken in 165° internal temp.
- Garnish with parsley or thyme & fluff your rice with a fork!
I seriously made this twice in one week because it was just that good! you could even add some cerlery or whatever you have in the fridge that you want to use up!
