Triple C Barbacoa

Not your average crock pot dinner. Triple C Beef Barbacoa that melts in your mouth & just satisfies the soul. A little citrus mixed with a little spice, served as a taco, over rice or over noodles. Whatever your preference is, I hope you enjoy it! (I'll take a better photo next time I make it because there will definitely be a next time!)

Ingredients: 

  • 1 Triple C Chuck Roast ( 3LB serves about 5)
  • 1 tbs. cumin 
  • 1 tsp. Smoked paprika 
  • 1 tsp oregano 
  • 1 tsp chili powder 
  • 1/2 tsp cinnamon
  • 2 bay leaves 
  • 2 tbs Brown Sugar 
  • 1 tbs vinegar 
  • 1 tbs Worcestershire sauce 
  • 2 tsp liquid smoke 
  •  1 case green chilies 
  • 1/2 can red enchilada sauce 
  • 1/2 onion, diced 
  • 3-4  cloves garlic, minced 
  • cilantro, chopped  ( garnish) 
  • 1/2 lime juiced 

Preparation: 

Y'all, I literally put my roasts in the crock pot frozen in the am! You don't have to, but it works every time! Put your slow cooker on low. Place your Triple C Roast in the crock pot and just let cook until you can push the roast into the pot. (when its frozen it doesn't always fit) Mix all of your dry ingredients together & smother Chuck Roast. then add all of your wet ingredients and mix it a bit. 

Let cook on low for 8-9 hours, or until you can shred the chuck roast. I pulled the meat out, shredded it and then put it back in the juices for a bit! Serve over a salad, in a taco, over rice or noodles. Garnish with some cilantro & invite your friends over.
