Caprese(ish) Steak Salad

Caprese salad - but make it Corie style! You can make this with any Triple C Steak. Its versatile & you know me by now...its a simple one!
Ingredients:
- Triple C Angus Steak - Flank, London broil, boneless sirloin, honestly its your choice!
- 1/4 c. Balsamic (I used Cardenas basil lemongrass that I have in store)
- 1/2 c. Olive Oil
- 1 tbs. dijon mustard
- 1 (or 2) tbs Triple C Smoked Honey
- 1 garlic clove, minced
- Sale & pepper to taste
- Green onions
- Cherry Tomatoes, halved
- Fresh Mozzarella, diced
- I used cilantro, but basil if you want to keep it traditional!
Preparation:
- Whisk the balsamic, olive oil mustard, honey, garlic and salt & pepper.
- Put your Triple C steak in a pyrex dish or a gallon zip block will work too!
- Pour marinade over top of it and let sit for 4 hours or overnight in the fridge
- Combine onion, tomatoes, mozzarella, cilantro and some salt and pepper. Set aside for serving!
- Heat up your grill or cast iron to a medium to high heat.
- Remove steak from marinade & cook on each side for about 4-5 minutes or until its at the temperature of your liking. I cook mine until it has an internal temp of 130°.
- Set steak aside to rest for about 3 minutes then cut thin against the grain for a tender bite.
Serve caprese salad over your steak & Enjoy! If you're like me you may want a little extra balsamic so go for it!
