Tacos de Lengua

Try something new & exciting! Prepared correctly, Triple C Beef Tongue is melt in your mouth tender. I truly encourage you to get out of your comfort zone. It is an incredible experience to enjoy & it makes for lovely tacos. 

Ingredients: 

  • 1 Triple C Beef Tongue
  • 2 Onions, cut in 1/2
  • 1 head of Garlic, pealed and left whole 
  • 6 bay leaves
  • 1 tbs. peppercorns
  • Hardcore Carnivore Tex-Mex
  • Corn Tortillas
  • 1 tomato, diced
  • 1 avocado, diced
  • 1 red onion, diced
  • cilantro
  • 1 lime, wedged 
  • Shredded cheese 

Preparation: 

  • Fill dutch oven 3/4 full with water
  • Add Beef Tongue + Onions + Garlic + Peppercorn + Bay Leaves 
  • Bring to a boil and then lower heat and simmer for 3 hours 
  • When done simmering, remove tongue from water 
  • Remove outer skin ( it will peel right off) 
  • Cut the harder part off of the bottom of the tongue - where the tongue meets the bottom of the mouth 
  • Slice tongue thin & then cut into cubes 
  • Sautee over medium heat with hardcore carnivore tex mex  
  • Build your tacos to your liking & enjoy - I know you're gonna love it! 

To be real - as I was cooking this I was sending photos to BJ & he said " this makes me uncomfortable" haha then he came home and ate 4 tacos plus took the rest as left overs the next day!
