I ditched the starch tonight and went straight the protein and the greens! 30 minutes from start to finish & you will be enjoying a balanced meal with citrus notes and a stunning finish. 

Chimichurri Ingredients:

  • 1 lemon
  • 1/2 cup cilantro
  • 4 Fresh garlic cloves
  • Salt
  • Pepper
  • 1/4 cup olive juice
  • 1 Chili pepper or chili flakes

Preparation:

  • In a food processor pulse ingredients until smooth
  • Add ingredients if you need to adjust flavor

Triple C Flank Steak

  • Marinate Flank Steak with 1/3 cup of chimichurri for 30 minutes up to 3 hours
  • Cook Flank Steak on a cast iron pan ( if you have one) 
  • Flip once and cook to internal temp of 130°
  • Let rest for 5 minutes
  • Cut against the grain and cut thin
  • Garnishing with a generous amount of chimichurri sauce
  • Enjoy every bite
